Rahmtaler Reserve
Emmentaler AOP is what most Americans see as the quintessential "Swiss Cheese": a big wheel with lots of eyes and a meltable texture. But the AOP rules are quite strict, and the milk used must be partially skimmed to qualify as Emmentaler. Enter Rahmtaler: the whole milk twist on a Swiss classic. Although it is rarer than its famous sister cheese, Rahmtaler is just as traditional, with recipes dating back as far as the 16th century. Rahmtaler almost went extinct during the 20th century due to standardization and industrialization, but the recipe was revitalized in 2016 by Swiss company Gourmino. This wheel of Rahmtaler has been aged for 15 months deep in mountain bunkers near the Reichenbach falls. The extra cream and extra time give Rahmtaler a beautiful depth of flavor: with notes of sweet florals and toasted hazelnut. Its as delicious for snacking as it is cooking.
