Abondance is recognizable by its concave rind and smooth interior. It has been made in the mountains of southeastern France since the 12th century. Abondance is name protected, made only from the milk of local heritage breed cows like Montbéliarde, Taurine, and of course, Abondance (The cow, the cheese, and the town it's from!). Abondance has aromatic notes of bouillon, fresh grass, and hot buttered noodles. Abondance is great for snacking but also shines as a cooking cheese.
