  Judy Schad is a central figure in the history of American Goat Cheese. Along with other "goat ladies" Mary Keehn and Allison Hooper, Judy founded Capriole and began making goat cheese at before Americans knew how. Calling each other on the phone and becoming close friends, these three women stumbled through the pitfalls and came out the other side together, with incredible cheeses to show.   Capriole Dairy's Sofia is an ash-ripened cheese, meaning the inside (and exterior) has a double layer of black ash, making for a striking image on a cheese board. The texture is unbelievably soft and features clean, light tangy flavors. The rind is so thin and velvety it offers an excellent texture contrast, but blends right into the flavor of the interior. A must-try on the American cheese plate.
