Coarse Sicilian Salt

SOSALT, founded in 1922 in Trapani on the eastern side of Sicily, has always focused on optimizing the cultivation and collection of salt without interfering with the natural ecosystem.   SOSALT Sea Salt comes from the ancient salt-pans of Trapani and Marsala, where crystal-clear sea water along with the strength of the sun and wind, create a unique salt that is particularly rich in the precious trace-elements found in sea water (Magnesium, Potassium, and Iodine) making it more soluble and complete. I always add some of this salt to the boiling water, before tossing in the pasta.
