Broccoli microgreens are the first shoots of a broccoli plant. They are slightly spicy and earthy, with a concentrated flavor that's more intense than mature broccoli. Broccoli microgreens contain up to 40 times more vitamins and minerals than mature broccoli, including sulforaphane, magnesium, manganese, copper, and zinc. They also contain phytonutrients (antioxidants), which are natural compounds in plants that help prevent disease. You can add these to virtually any meal including salads, sandwiches, smoothies, or as a garnish for other dishes.
