This informal sparkler is fun and fresh, offering brisk acidity and a lively perlage, with a dry, clean finish. WINEMAKING NOTES: Extended lees contact for at least 3 months before the second fermentation. Second fermentation takes place in autoclaves initiated in batches up to 30 times throughout the year.
