Do I Sauternes you on? About the design: Sauternes is a sweet wine from Graves in the Bordeaux region of France. This dessert wine is made from Semillion, Sauvignon Blanc & Muscadelle grapes infected with Botrytis cinerea or "Noble Rot." This fungus weakens the grape skins which allows the water inside the fruit to evaporate causing them to raisin. The infected clusters are left with concentrated sugars & acids that when fermented, make delicious & highly prized dessert wines that taste of honeyed apricots, butterscotch & spices. Sauternes was included in the famous Bordeaux Classification of 1855, a ranking system put in place by Napoleon III the basis of which is still used today.
