Paso Robles, California. 35% Chenin Blanc, 35% Pinot Gris, 12% Riesling, 12% Albarino, 4% Tokai Friulano, 2% Verdelho. Organic and sustainable. Spontaneously skin-fermented between 48 hours and 45 days in stainless steel tanks. Aged 4-7 months in acacia barrels and neutral oak barrels. Blended, filtered, and bottled with a small addition of sulfur. Apricot, Haitian Orange, Marzipan – goes well with Blue cheese, duck, cuisines like Mexican or Thai, dried fruit… endless possibilities here!
