A vibrant, zero-dosage sparkling blend from Filipa Pato & William Wouters, crafted from biodynamic vines rooted in Bairrada’s chalky clay soils. Primary fermentation takes place with wild yeast in tank, followed by a second fermentation in bottle and 9 months of sur-lie aging for texture and finesse. Mineral and fresh on the nose with pear, fennel, and subtle herbal notes of thyme and honey, the palate is refined and creamy with lively fruit and a crisp, dry finish. A beautifully balanced, naturally expressive sparkler.
