Folk Machine, White Light (2024)

California. Albariño (Alvarinho), Sauvignon Blanc, Tocai Friulano, Verdelho, and Vermentino blend. Organic. Driven by the idea of making a lightly aromatic, textural white that’s fresh, acid-leaning, mineral, and effortlessly drinkable, each variety in this blend was fermented individually in stainless steel without commercial yeast at cool temperatures. The components were blended gradually as fermentations finished, with spontaneous fermentation, partial malolactic, no oak, and a touch of residual CO₂ preserved at bottling to keep the wine bright, summery, fun, and easygoing.
