Alice et Olivier De Moor 'Vau de Vey' Chablis 1er Cru, 2022
100% Chardonnay from just under a hectare of vines in the southeast facing Vau de Vey Premier Cru in Chablis. It is one of the great cool Climats as it only receives morning sun, and cool northern winds rushing through its valley, lengthening the grapes' ripening time. The cru also boasts extremely steep hillsides, and machine harvesting is almost impossible. Soil types are heavy Kimmeridgian marl, which force the vines to strenuously search for nutrients. Vinification is done through a lengthy fermentation in 228L barrels, with the juice aging on its lees for a year or more without racking. Bottled unfined and usually unfiltered unless a small amount is absolutely necessary. Pair this amazing bottle of wine with poached seafood dishes like poached cod in tomato curry, with light meat dishes like veal scallopini in a white wine sauce with capers, or with alpine style cheeses lime comte or emmental.
