Variety: Catuai More About This Coffee This selective harvest from March 2025 used perfectly matured cherries (21–23 °Brix). Wet/washed with double fermentation: dry pre-fermentation in barrels, followed by 83 hours submerged at 18–23°C (final pH 4.0, 16 °Brix). Dried on African raised beds under partial shade for 22 days (18–28°C), reaching 10.8% moisture and 0.58 water activity for optimal preservation.
