It’s berry season. And you would be foolish not to macerate mixed berries in whipped cream, brown sugar and amoretto. August’s drop is inspired the Berry Fool. The ‘Foole’ dessert originates in England as early as 1598. In French the term ‘fouler’ means to mash or crush—which is exactly how you are preparing the fruit. So first assemble your berries. We are using manifold strawberries, blueberries, raspberries, cranberries and cherries. Season with amoretto—and favorite summer flavor of mine—and then fold into a mixture of almonds, vanilla chips and crushed graham crackers. Add maple syrup, honey and dark brown sugar then bake until crunchy. Stay foolish and enjoy the rest of summer.
