Miso Caramel Granola

Very occasionally I partner with a culinary legend and June’s drop is one of those special moments. Made in partnership with pastry legend Dominique Ansel—Flavor 53 is Miso Caramel. Miso caramel felt like the perfect flavor for this collaboration. A savory ingredient from Japan, miso paste adds notes of umami and salt to rich and luxurious dulce de leche. After testing pears and figs we added dried pineapple for notes of tartness and summer light. Lastly sprinkle in sesame brittle for a crunchy dimension and you have our recipe!  Made by two dads. Approved by five kids.
