Shopify uses a recently-upgraded enclosed checkout process. That is, they strip down the two (and only two!) checkout steps to a bare-bones theme—logo, colors, basic layout. Two reasons for this: it ensures that Shopify have complete control over the information-sensitive checkout pages (you can’t add any evil scripts etc!) and can serve everything over a PCI-compliant encrypted (SSL) connection; there is research showing that this process increases conversion: Why You Should Enclose the Checkout Process. Further… Shopify’s checkout process differs from most in that it does not require sign-in before checkout: If you have an account… sign in & purchase If you do not have an account… purchase & then create an account if you want (having already entered address details, name etc. all you need is a password). Again, this is based in lots of customer research and involves the least friction. (read: “you can’t really alter it, but why would you want to?!”).
