Maximilian sunflower is a tough native perennial of the prairie. It has low water requirements, and can handle that harsh summer sun with very few pests and diseases. Not only that, it produces a spray of bright yellow flowers in the late summer/fall that provide pollen and seeds to native wildlife. This plant can grow quite large when established (10 feet), so make sure you provide plenty of space for it to grow.
