To maintain freshness, always thaw in the refrigerator only a few ours before preparing. Maintain natural saltiness by lightly rinsing after removing the shells; NEVER soak in freshwater as this will destroy the natural flavorful character of wild shrimp. Avoid over-cooking, as they take only a few minutes to become plump and ready to eat.
