Pompano

Buttery, dense, delicate yet full flavored; the best of both worlds. If you want to transition from a mild, white fish to a better versed one, then pompano is a great fish to start with.. They range  between 1-3lbs but have been known to grow bigger. They have a high yield, meaning they do not loose as much meat once you fully fillet the whole fish (it’s about 50%). Its skin is edible and does not need to be scaled! They are highly migratory and are constantly testing the fishing notions of feast or famine.
