Boning knife, stainless

Medium flex boning knife with full flat ground, distal taper blade. Field polish finish for a smooth surface that reduces corrosion, cutting resistance and is easy to sanitize. High durability AEB-L steel at 62 Rc. With our heat and cryogenic processing, this is the toughest stainless steel there is with good edge holding. The steel responds well to honing rods and regular abrasive stones and strops. Handles are permanently sealed and mechanically fastened. Approx 6.25" blade and 10.25" overall length. Sculpted g10 handles with a wide center swell contour for hand support and reduced fatigue. Includes modular & ambidextrous heavy duty kydex sheath with thumb ramp and drain hole at point. Included OWB belt clip.
