We're excited to launch this stunning coffee, which was the result of a long-time collaboration between BICR and Silver Cloud Coffee Farm.  Our goal in this collaboration was to enhance aromas, highlight sweetness, and create a buttery mouthfeel in this Typica variety coffee. Throughout the harvest season, we trialed a variety of wine yeasts to help break down and remove the mucilage via fermentation. The side effect of using certain types of yeast is that they impart delightful characteristics to the coffee. What we found in our experiments is that one particular yeast created a very buttery body and silky mouthfeel with rich, balanced flavors of honey, butter, chamomile, and white wine. We sometimes describe Ka'ū coffees as hidden gems. They display a great range of flavors and are often purchased by specialty coffee lovers and locals alike.
