Brown rice miso paste (Genmai miso) is a traditional type of miso paste made from soybeans and brown rice koji. The difference between Brown Rice Miso and other miso paste varieties is the use of brown rice instead of white rice. Brown rice miso is considered a long-term miso because it is aged longer (6 months to 1 year) to develop a sweet, earthy flavor and dark red color. * Note: Our Organic Brown Rice Miso aging time has changed from 24 months to 12 months.
