This 2lb sourdough levain boule is generously stuffed with dried apricots, apples and toasted pecans. It makes a wonderful breakfast bread or accompaniment to cheese. It is leavened with 100% wild cultured sourdough starter. It begins with a 12 hour levain preferment, which is then used to build the main dough. Once incorporated, the final dough is fermented at 72 F for 2 hours after which point the dried fruit and nuts are mixed in. It then undergoes 12 plus hrs of cold fermentation before shaping, proofing and baking.   Ingredients: Filtered water, brown rice flour*, tapioca flour, millet flour*, sorghum flour*, potato starch, potato flour, flax seed*, extra virgin olive oil*, GF wild sourdough starter, roasted pecans, dried apricots, dried apples, non-gmo xanthan gum, psyllium husk*, guar gum, sea salt, cane sugar*.
