5 Sentidos Ensamble De 4 Plantas 750ml - The field blend of Bicuixe, Madrecuixe, Espadin, and Desert Spoon (Cucharillo) is a unique creation from master distiller Atenogenes Garcia and his son Jose. This marks the first time they have incorporated wild-harvested Cucharillo (Dasylinon Serratifolium) into their production process. All four species of agaves were harvested from the same plot of land in San Isidro Guishe, Oaxaca, then roasted together in an underground oven for six days using gauche and mesquite firewood. The roasted agaves were then crushed by a large two-ton tahona pulled by an old 1960s tractor. The resulting fibers were then fermented in two pine tanks with wild yeasts and calcium-rich well water until fermentation was completed. The mash was then double-distilled in two copper alembic stills at Atenogenes' palenque, "El Labrador," also located in San Isidro Guishe, Oaxaca.
