Ecuador - Angel Carrion

Enjoy is a Providence-based roaster producing some of the smoothest, most complex floral and citrus-forward cuts this side of the Atlantic. This Yellow Maracaturra underwent a yeast inoculation during the fermentation process wherein reactivated cima yeast is added to the parchment in muscelage to modulate the flavor profile (more florals and tropical fruit acids). The resulting cup is a deep and concentrated dose of aromatics enveloped within a silky smooth tea-like texture. That shifts to a honeycrisp cider profile as the cup cools down. It's elegant, and a bit sinister. Best enjoyed 7-30 days after roast. Size: 10 oz
