Aji Amarillo is a Peruvian variety produces large quantities of 2-inch long, yellow-orange peppers with a fruity flavor and medium heat level.  Peppers are initially yellow, ripening to a vibrant orange when mature.  Ubiquitous in Peruvian cuisine, the amarillo chile frequently makes its way into sauces, soups, pastes, and dried ground spice.
